Ancient Roman Winery
Ancient Romans enjoyed drinking wine. There were many types of wines, some of it aged fine wine and some of it cheap wine. People bought wine depending on what they could afford. The flavor of the wine depended on the types of grapes they planted and the types of soil they were planted in and the type of storage that was used. In ancient Rome people used clay pots to carry and store massive amounts of their wine which was later poured into smaller clay vases so that it could be more easily stored. The wine was made from grape juice that was extracted by stomping or crushing the grapes in a press. The most prized wine was the juice made by stomping the grapes.
When Romans made wine, it was heavily watered down so they could drink large quantities of wine with out getting drunk as fast. Some Romans put honey in their wine to make it sweeter. In Roman times, wine was made was made by placing the grapes in a press that used wooden beams powered by manual labor. Occasionally the vintners used their feet. After the grapes were pressed, the juices ran off into a basin and then collected in a dolia, which was a wide large vase that could hold several thousand liters. It was then placed in the ground to ferment. Romans sometimes added chalk and marble dust to reduce acidity in the wine.
Wine was often used by the Romans in religious ceremonies. Bacchus, the god of wine, was widely and enthusiastically worshiped.

The machines and process used to make red and white wines are different. The main distinction between red wine and white wine is that red wine is made from the whole grape, including skin and stem. This gives red wine a deeper color and a distinctive taste. In producing a white wine, the skin and stem are removed. The wine is thus made only from the pulp of the grape.
